Seeing the sights in Panama.

Jim and I like to travel down these small roads off the

PanAmerican Highway.

Some are paved with a few potholes,

others are not so good.

We have been fortunate to find a few great little eating places along the way.

The food is really good here,

tasty, well presented and comforting.

The watermelons, pineapples and papaya

are arriving by the truckloads

and setting up on the road sides.

One of the best things is that you can drink the water here.

Here are a few photos of what we have been

Cranberry mincemeat tart

I saw this recipe in British Country Living

and had to adapt it to cups and ounces.

I used

1 pkg of Pepperidge Farm Phyllo Frozen Dough,

1/2 whole cranberries sauce, 1/2 mincemeat as well as the zest

of an orange..I did not add any sugar.

baked at 425 for 20 minutes.

It was a success and I will make it again.
