Caramelized Onion and Blue Cheese Crostini...from www.pinkbasil.com
I normally make caramelized onions with any onion I have on hand, but for this particular recipe I highly recommend using a sweet onion since it helps to contrast the sharp blue cheese.
Makes approx. 10 crostini
1 large sweet onion sliced or chopped (personal preference)
2 tablespoons olive oil
Salt
1 teaspoon fresh thyme leaves
1 baguette, sliced and toasted
1/2 cup blue cheese crumbles
In a large saute pan heat the olive oil on medium-low heat. Add the onions and sprinkle with a dash of salt. Cook, stirring often, for about 5 minutes or until they have softened and then add the thyme leaves. Cook the onions, stirring often, for another 20-25 minutes or until they have turned brown. Remove from heat.
Spoon the onions over the toasted bread and top with blue cheese crumbles.

mmmm ... it looks yummy ... even though I do not like blue cheese ... perfect for an appetizer to share with friends ... I may have to try it using a different kind of cheese ... !!! xoxo
Oh, yum! Thanks for the recipe, Dagmar! I'm going to try this for Thanksgiving. We're doing appetizers early in the day since dinner will be later.
